Summer is my favorite season when it comes to desserts. There is a natural shift toward healthy treats when seasonal fruits are so plentiful. We are right in the heart of strawberry season and I couldn’t be happier! Last week, I made a batch of these naturally sweet Strawberry Chia Popsicles and we enjoyed them all weekend long.
Making popsicles at home is actually incredibly simple, especially when you turn to seasonal fresh fruit such as fresh strawberries. This time of year, the strawberries are so naturally sweet there is no need for additional sweetener.
Strawberries are a nutritional powerhouse full of antioxidants and a whopping dose of Vitamin C. Eating strawberries can also contribute to a healthy cardiovascular system and help with weight loss. Not too bad for a berry that is also incredibly delicious.
These Strawberry Chia Popsicles are only three ingredients:
- fresh, sliced strawberries
- unsweetened coconut milk
- chia seeds
The unsweetened coconut milk provides a bit of creaminess and just enough liquid to allow the strawberries to blend smoothly. If you do not have coconut milk on hand, feel free to substitute your favorite milk or even water.
The other key ingredient to these popsicles is chia seeds. The chia seeds help the consistency of the popsicles while also bringing antioxidants, fiber, and omega-3 fatty acids to these simple, yet nutrient-packed superfood pops.
This method of making popsicles can be used with a number of different fruits. Next time you want to make a batch of fruity superfood popsicles try using blueberries, mango, or kiwi. If the fruit you are using is not incredibly sweet, simply add a tablespoon of raw organic honey for a touch of sweetness.

Strawberry Chia Superfood Pops
Strawberry Chia Superfood Pops are a healthy, superfood dessert that take only 3 ingredients to make and the whole family will love.
Ingredients
- 3 cups sliced fresh ripe strawberries
- 1/4 cup unsweetened coconut milk
- 1 tablespoon chia seeds
Instructions

Blend the strawberries and coconut milk in a blender until smooth. Add the chia seeds and briefly blend on a low speed until the seeds are incorporated into the strawberry mix.

Pour the mixture into popsicle molds and freeze for 8 hours or overnight.
