One thing I’ve found lately is the way to my kids’ hearts – popsicles. There’s nothing they love more than a colorful, ice cold treat at absolutely any time of the day. We have the world’s most amazing paletas shop nearby – too close, really, because popsicles now feel like a treat we deserve after surviving a hot, summer day.
But my little trick is to blend up a fruit and coconut milk smoothie and pour it into a popsicle mold. Enter these gorgeous coconut milk popsicles, aka the easiest thing in the world. I can hide all sorts of good stuff in these (spinach even), and the kiddos will devour it – as long as you call it a popsicle!
These coconut milk popsicles are perfect for moms like me, who like to throw whatever is on hand in the blender, because who can find a recipe when you need it? Full fat coconut milk adds good fats and a creamy texture you can combine with just about any fruit for sweetness. The popsicles are vegan, which is lactose-sensitive tummies will appreciate. There’s also chia seeds involved, which are loaded with antioxidants, fiber, and quality protein. And with no sugar added, the pops are really a healthy choice for your little ones. So healthy, in fact, we may start having popsicles for breakfast. (Am I the only one with kids who won’t eat?!) Popsicles all day! I’ll be the most popular mom ever.
For this particular batch, I used strawberries and banana for half of the popsicle molds, and I mixed kiwi with banana and spinach for the other. Coconut Milk Smoothie Popsicles

Ingredients
- 1 can full fat coconut milk
- 1 tablespoon chia seeds
- 1/2 banana
- 1 cup fresh fruit use whatever you have on hand
- Handful of spinach or kale optional
Instructions

Combine ingredients in blender and mix until combined.
