How To Make Yogurt Brûlée with Fresh Berries

Skyr yogurt is one of my favorites. The extra thick and creamy yogurt feels so decadent – almost too decadent to be healthy for you. But that’s not the case at all! The yogurt is the perfect stand-in for eggs and cream to make a Healthy Berry Yogurt Brulee recipe you can dig in to for breakfast or dessert.

How To Make Yogurt Brûlée with Fresh Berries

Technically the yogurt is actually skyr (pronounced skeer), an Iclandic-style yogurt that’s strained until very thick yielding a creamy, cultured product that has 2-3 times the amount of protein as other types of yogurt. Each 8-ounce serving of plain skyr only contains 120 calories and a whopping 23 grams of protein with no added sugars, artificial sweeteners, preservatives, thickeners or coloring. Look for plain yogurt that lists only two ingredients: skimmed milk and live active cultures.

Healthy Berry Yogurt Brûlée

This recipe makes a lovely breakfast, snack or dessert. The best part is that it’s almost instant – only three ingredients and no baking required! Line the bottom of four six-ounce ramekins with fresh berries, then top with plain Siggi’s yogurt. Place in the freezer for 5-10 minutes.

The secret to a rich, crunchy creme brulee topping is the sugar and an open flame. Simply sprinkle the tops of each yogurt cup with 1/2 to 1 teaspoon organic cane sugar. If you have a culinary torch, just run it over the top to melt and caramelize the sugar, otherwise place the ramekins under a hot broiler for a few minutes.

And that’s it! In about 15 minutes (not 4 or more hours!) you can be enjoying a healthy version of creme brulee with all of the flavor and satisfaction and none of the guilt!

Ingredients

  • 1 2/3 to 2 cups plain Siggi's yogurt 0% or 2% fat is fine
  • 1 pint fresh berries
  • 2-4 teaspoons organic cane sugar
  • Fresh mint optional garnish

Instructions

  1. Line the bottom of four six-ounce ramekins with fresh berries, then top with plain Siggi's yogurt.
  2. Place in the freezer for 5-10 minutes, then sprinkle the tops of each one with 1/2 to 1 teaspoon organic cane sugar.
