Vegan Mint Chocolate Ice Cream

Ingredients

  • 4 ripe bananas cut into small chunks frozen
  • 1/2 cup full fat coconut milk refrigerated
  • 1 tsp organic peppermint extract
  • 5 oz vegan chocolate
  • Fresh mint leaves to garnish

Instructions

  1. Add the bananas and coconut milk into the food processor (without adding any other liquid) and process until you obtain a smooth cream.
  2. Add the peppermint extract and pulse to incorporate.
  3. Transfer the mixture into an ice cream container and freeze for at least two hours.
  4. Melt the chocolate in a sauce pan over low heat.
  5. Scoop the ice cream into serving bowls, drizzle with melted chocolate, garnish with fresh mint leaves and serve.
