Berry Ginger Smoothie Popsicles

Ingredients

  • 1 cup frozen berries I used raspberries and blueberries
  • 1 banana chopped
  • 3 tablespoons rose water
  • 3-4 fresh mint leaves
  • 1/2 teaspoon freshly grated ginger
  • 1/2 cup coconut yogurt you can replace it with full-fat coconut milk
  • 2 teaspoons organic raw honey

Instructions

  1. Add berries, banana, rose water, ginger and mint to a blender and process to obtain a smooth, creamy mixture.
  2. Evenly divide the berry smoothie into the popsicle mold.
  3. Mix the yogurt and honey in a bowl, then pour it on top of the berry smoothie.
  4. Use a toothpick to gently mix the yogurt with the smoothie, to create the marble effect.
  5. Freeze for at least 5 hours, then serve.

Recipe Notes

Leftover popsicles should be stored in an airtight container in the freezer and eaten within 2 months.
