Wild Bounty Bites

  • 1 cup unsweetened shredded coconut plus more for sprinkling
  • 2 tbsp coconut oil
  • 1 1/2 tbsp maple syrup
  • 1/2 tsp vanilla bean ground
  • 1 pinch salt
  • 1 tsp water
  • 1 oz vegan dark chocolate


  1. Line a baking sheet with parchment paper. In a mixing bowl, combine all of the ingredients, except for the chocolate.

  2. Using a small ice cream scoop, shape the mixture into 10 or so balls, releasing them onto the lined baking sheet. Chill for at least 1 hour.

  3. Melt the chocolate and dip the balls in it until coated. Sprinkle with shredded coconut and chill in the refrigerator until ready to serve.
