Braised Fingerling Potatoes with Fresh Herbs

Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion sliced
  • 1 1/2 pounds fingerling potatoes cut lengthwise
  • 4 cloves garlic sliced
  • 1 cup vegetable broth
  • Salt and freshly cracked black pepper to taste
  • Coarsely chopped parsley thyme, and/or rosemary and shaved Parmesan cheese for serving (optional)

Instructions

  1. Preheat oven to 375ºF.
  2. Heat the olive oil and butter in a large cast iron or oven-safe skillet over medium-low heat. Add the onion and cook, stirring often, for 10-15 minutes or until softened. Stir in the potatoes and garlic.
  3. Increase the heat to medium-high and continue to cook until the potatoes are beginning to brown, about 10 minutes. Pour the broth into the skillet and remove from heat.
  4. Cover the skillet and place it in the preheated oven. Bake covered for about 10 minutes, until the potatoes are tender, then remove the cover and cook until the liquid has reduced into a thick sauce that coats the potatoes, about 15-20 minutes more.
  5. Season with salt and pepper to taste; serve with fresh herbs and Parmesan, if desired.
