Single-Serve Microwave Baked Coconut Oatmeal

Single-Serve Microwave Baked Coconut Oatmeal is a wholesome, all natural breakfast great for on-the-go.

Ingredients

  • 1/2 cup old fashioned rolled oats
  • 1/3 cup coconut milk or other non-dairy milk I used coconut almond milk
  • 1 tablespoon raw honey
  • 1 egg white
  • 1/2 teaspoon coconut oil
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon kosher salt
  • Toasted coconut flakes or chips for garnish
  • Additional honey for topping if desired

Instructions

  1. In a microwave safe mug, mix together oats, coconut milk, raw honey, egg white, coconut oil, cinnamon, and salt. Microwave on high for 1 minute and 30 seconds. Check to make sure oatmeal is cooked through. Microwave for additional 15 seconds if needed.
  2. Garnish with coconut flakes or chips and additional honey if desired.
