Mocha Maca Muffins

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 tablespoon maca powder
  • 1 tablespoon flaxseed
  • 3 tablespoons cocoa powder
  • 1 tablespoon vanilla extract
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 packet dark roast instant coffee
  • 1/4 cup plus 1/2 cup macadamia nuts chopped
  • 1/4 cup mini chocolate chips
  • Turbinado sugar

Instructions

  1. Preheat oven to 400ºF. Grease muffin cups or line with muffin liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt, cocoa powder, flaxseed, maca, and baking powder.
  3. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix in the instant coffee and stir well.
  4. Add this to the flour mixture. Add in ¼ cup of nuts, mini chocolate chips, and vanilla.
  5. Fill muffin cups right to the top, and sprinkle with turbinado sugar and remaining nuts.
  6. Bake for 15-20 minutes in the preheated oven, or until done.
