Chocolate Chunk Banana Oat Muffins

Ingredients

  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder
  • 1 egg
  • 1 cup old fashioned oats
  • 1 cup ripe mashed ripe banana about 2 bananas
  • 1 6-ounce container plain Greek yogurt
  • 1/2 cup packed brown sugar
  • 1/4 cup coconut oil melted
  • 1/3 cup roughly chopped dark chocolate

Instructions

  1. Preheat oven to 400ºF and line a muffin tin with 12 liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
  3. Beat the egg in a large bowl. Stir in the oats, banana, yogurt, sugar, and coconut oil and mix well.
  4. Pour the dry mixture into the wet mixture. Stir until everything is just incorporated, being careful not to over-mix. Fold in the dark chocolate.
  5. Divide the batter into the muffin cups. Bake for 17-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Recipe Notes

If desired, top your muffins with thinly sliced bananas, additional oats or chocolate chips, or a sprinkling of turbinado sugar before baking.
