Our typical school mornings are total chaos. It may be a cliché, but it’s true! Mocha Maca Muffins
A mocha treats with chocolate and maca, an adaptogen with energy-boosting and hormone-balancing benefits
Ingredients
- 1 1/2 cups flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 tablespoon maca powder
- 1 tablespoon flaxseed
- 3 tablespoons cocoa powder
- 1 tablespoon vanilla extract
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 packet dark roast instant coffee
- 1/4 cup plus 1/2 cup macadamia nuts chopped
- 1/4 cup mini chocolate chips
- Turbinado sugar
Instructions

Preheat oven to 400ºF. Grease muffin cups or line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt, cocoa powder, flaxseed, maca, and baking powder.

Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix in the instant coffee and stir well.

Add this to the flour mixture. Add in ¼ cup of nuts, mini chocolate chips, and vanilla.

Fill muffin cups right to the top, and sprinkle with turbinado sugar and remaining nuts.

Bake for 15-20 minutes in the preheated oven, or until done.
